Ajiaco Santafereno, or Ajiaco Bogotano o Santafereño, is a soup strongly associated with Colombia and Bogota. Variations exist but the soup is usually made with chicken, multiple kinds of potatoes (especially papa criolla), corn and the herb called guascas.
